Asian Cobb Salad (No Boring Salads Here!)
Have you fallen into a salad rut? As much as I love a good salad, especially in the warm weather months, I find that if I’m not excited about the salad itself, it is very hard to get motivated to do the prep work and thus, peanut butter and jelly comes into play. Not that I don’t love a good PB&J now and then, but it definitely doesn’t have the nutritional value that a good salad does.
So when I saw this recipe from Damn Delicious for an Asian Cobb Salad, I felt like this was the one to take me out of my salad rut. It combines so many delicious things…avocado, hard-boiled eggs, mandarin oranges, and a sesame vinaigrette. Sold! I made some minor changes, but overall I followed the original recipe almost entirely. Feel free to modify as you see fit!
Ingredients:
- 5 cups chopped romaine lettuce
- 1 (11-ounce) can mandarin oranges in light syrup, drained
- 1/3 cup shredded chicken
- 1/3 cup grated carrots
- 1 avocado, halved, seeded, peeled and diced
- 2 hard-boiled eggs, diced
- 1/4 cup sliced green onions
For The Sesame Vinaigrette:
- 1/4 cup plus 2 tablespoons rice wine vinegar
- 1 clove garlic, pressed
- 1 tablespoon sesame oil
- 1 tablespoon sugar
- 1 teaspoon freshly grated ginger
- 1 teaspoon soy sauce
My Changes:
- I omitted the chicken because I didn’t have any.
- I added in some purple cabbage.
- I used 1/2 T of sugar.
- Instead of soy sauce, I used Braggs Liquid Aminos. The liquid aminos are made from non-GMO soybeans, do not contain preservatives, and the aminos are a source of protein. (When I run out of this, I plan to try Coconut Aminos which are free of soy and contain more amino acids).
Directions:
- Wash greens and add to a large bowl.
- Chop up onions and avocado and add to bowl along with shredded carrots.
- Drain mandarin oranges and add to the salad mix.
- Chop up onions and grate ginger.
- In a small bowl, prepare dressing by whisking together the rice wine vinegar, chopped garlic, liquid aminos, ginger, sesame oil and sugar.
- Add dressing and enjoy! (I like to add the dressing to each individual bowl of salad and not all at once, but do what works for you!)
This salad was just what I needed to get me out of my salad rut. It is perfect for a warm, spring day!
Quick tip: You can do most of the prep work beforehand by chopping up your veggies, minus the avocado, and preparing the dressing. That way when you are starving and ready to eat, you won’t talk yourself out of a salad and settle on PB&J…not that there’s anything wrong with that 🙂

Does the liquid aminos taste similar to soy sauce? Never tried it. Does the coconut aminos taste like coconut?
The liquid aminos taste really similar to soy sauce, I can’t pick up on any difference in taste. I haven’t tried the coconut aminos yet so I can’t really say, but from what I’ve read it doesn’t have a coconut taste. I will let you know after I try it!

Yum! I try to it healthier this summer and this salad sounds like a perfect summer snack. :). Unfortunately, I Iwould have to skip the onions and garlic (due to my ibs) 🙁
